Description

This classic salad originated in the south of France.

Ingredients

  • 1 lettuce (romaine, bibb)
  • 1 cooked green beans or asparagus
  • 1 roasted or boiled new potatoes
  • 1 hard-boiled eggs
  • 1 pitted black olives
  • 1 capers
  • 1 cucumbers
  • 1 tomatoes
  • 1 grilled sliced salmon or tuna

Instructions

Arrange ingredients of choice in a large bowl or on a large plate. As a dressing, sprinkle olive oil and red wine vinegar or balsamic vinegar on the salad. You may also use an Italian or French dressing, or serve a dollop of mayo and a Dijon-type mustard on the side and mix as you eat.
