Green Eggs and Goat Cheese Stratta

Serves 8-12.

Ingredients

  • 6-9 slices of bread, cubed (can be older bread)
  • 1 lb chopped greens, such as swiss chard, spinach, or mustard greens
  • 1 c crumbled goat cheese
  • 1⁄2 c chopped sun-dried tomatoes
  • 2 c skim milk
  • 1⁄2 t dry mustard
  • 1⁄2 t salt
  • 1 sli stick butter, melted
  • 8-10 eggs, beaten

Instructions

Grease a 9" x 13" pan and add bread cubes. Layer with greens, tomatoes, and cheese. Pour eggs, beaten with milk, mustard, and salt, over the mixture in the pan. Pour melted butter over last. Cover and refrigerate overnight.

Bake 1 hour at 350º, covered for the first 45 minutes. Let set for 5 minutes after removing from oven. Cut into squares. Makes 8–12 servings.
