Pasta with Greens, Walnuts, and Feta

Serves 4-6.

Ingredients

  • 1-2 pounds chopped summer greens, such as spinach or collard greens
  • 1 c chicken broth
  • 1⁄2 c dry white wine
  • 1 t olive oil
  • 3 t chopped garlic
  • 2 T red pepper flakes (or to taste -- we like spicy food
  • 1⁄2 t salt
  • 8 oz chopped walnuts, toasted
  • 1⁄2 c crumbled feta cheese
  • 12 oz cooked pasta of your choice

Instructions

In a large skillet, heat the oil. Add the garlic and sauté. Add the greens, white wine, and broth. Cook over low to medium heat until the greens shrivel. Add the salt and red pepper flakes. Heat through. Toss the greens mixture with pasta, walnuts, and feta. Enjoy! Serves 4–6 people.
