Crustless Summer Greens Quiche

Serves 6-8.

Ingredients

  • 1 c onion, chopped
  • 1 c fresh mushrooms, chopped
  • 1 T vegetable oil
  • 1 lb chopped dark summer greens, such as spinach or mustard greens
  • 2⁄3 c chopped ham
  • 5 eggs
  • 3 c grated cheese of your choice
  • 1⁄4 t ground black pepper

Instructions

In a large skillet, sauté the onions and mushrooms in oil. Add the greens and ham. Cook and stir until excess moisture has evaporated. Cool slightly. Beat eggs, add cheese and black pepper, mixing well. Add the egg mixture to the vegetables.

Spread into a 9-inch greased pan or quiche pan. Bake at 350º for 40–45 minutes—until knife inserted comes out clean. Serves 6–8 people.
