Southwestern Pinto Bean Burgers

Ingredients

  • 1⁄2 c diced onion
  • 1⁄2 c dried bread crumbs
  • 1⁄4 c dried cilantro
  • 1 T minced seeded jalapeno or serrano pepper
  • 2 T sour cream or plain yogurt
  • 1 t ground cumin
  • 1 t ground chili powder
  • 1⁄2 t salt
  • 1 large egg
  • 1 15-ounce can pinto beans, drained
  • 1⁄2 c frozen corn, thawed
  • 1 T canola oil

Instructions

Combine onion through egg in a large bowl. Add pinto beans and corn, mashing beans with a fork. Divide mixture into four parts and shape in patties; refrigerate 10 minutes.

Heat oil in a cast iron or non-stick skillet over medium heat. Add patties and cook apprroximately 4 minutes per side, until browned.

Serve on buns with lettuce and tomato, or just as they are. Enjoy!
