Description

Ingredients

  • 1 T oil
  • 1 large onion, diced
  • 1 15-ounce can kidney beans
  • 1 14.5-ounce can diced tomatoes
  • 1 T brown sugar
  • 2 t chili powder
  • salt and pepper to taste
  • 3⁄4 c cubed leftover beef, ham, sausage, or chicken
  • 2 T corn flour

Instructions

Saute onion in oil. Add tomatoes and beans. Bring to a boil. Lower heat and add brown sugar, chili powder, and leftover meat. Simmer for 10 minutes.

Green leafy shreds can be added here. Thicken with corn flour if necessary. Place in one-cup freezer containers for later use. Garnish with cheddar cheese shreds when served. Good protein source on busy days.
