Seasoned Spinach

[See Jill Caldwell's article "Green vegetables: a meat-free iron source".] One of my favorite greens recipes is a modified and simplified version of Madhu Gadia’s “Palak Paneer” recipe from New Indian Home Cooking (Penguin Putnam, 2000), which I call “Seasoned Spinach.”
